Friday (2/15) is the release of Shot a Man in Simcoe – the Belgo-IPA collaboration between Lake Effect Brewing and yours truly [DryHop Brewers] at Paddy Long’s (1028 W. Diversey). The beer gets tapped at 7pm.
The first 25 people to order a beer will enjoy it in one of our Belgian Snifters. You will, inevitably, feel a strong desire to liberate this fine glass. Consider it our gift.
Generally speaking, Belgo-IPAs are inspired by American India Pale Ales. They use various malt combinations, are finished with Belgian yeast strains, and the hops tend to be American. When compared to American IPAs, the style generally has a cleaner bitterness and a pronounced dry edge; often akin to an IPA crossed with a Belgian Tripel. Many examples are quite cloudy and feature tight lacing, excellent retention and fantastic billowy heads (thanks, in part, to the hops). Alcohol by volume is on the high side.
Our version, Shot a Man in Simcoe, was brewed with copious amounts of Centennial, Simcoe, and Citra hops.It was fermented on a French Saison yeast strain at 80 degrees, allowing the beer to attenuate about 90 percent, The result is a dry crisp ale with a few Belgian phenols thrown in for good measure. The finish will be citrusy and floral due to the addition of more Simcoe and Citra during the dry hop process. Be warned this one is an easy drinker for a 7.5% ABV brew.
